Article 1
Purpose. This Agreement stipulates the principles, regulations, methods, and measures concerning the slaughter of animals and the sanitary inspection of animal products, in order to safeguard the health and safety of slaughterers, cooks, processors, and consumers, limit the spread and dissemination of animal diseases, while ensuring no adverse impacts on society and the environment.
Article 2
Animal Slaughter. Animal slaughter refers to the killing of animals by physical or chemical methods in a manner that does not cause suffering to the animal (by rendering the animal unconscious or causing its rapid death). Slaughter, as referred to in this Agreement, means the slaughter of animals for obtaining meat and animal products for processing, consumption, or sale, or the slaughter of animals to control the spread of epidemics within a specific area.
Article 3
Sanitary inspection of animal products. Sanitary inspection of animal products refers to the professional examination of the condition of animals before and after slaughter, specifically: ante-mortem inspection refers to checking relevant documents and the healthy and intact condition of the animal’s body; post-mortem inspection refers to the examination of meat and the organs of the three parts: head, carcass, and viscera. All of the aforementioned inspections aim to ensure that food provided to consumers is safe, preventing them from contracting animal diseases or being harmed by contaminants harmful to humans, animals, and the environment.
